Miller increased her orders with KP Simply Fresh as a result of changes encouraging healthier choices in the café.
A year ago, Amy Miller starting putting a plan into action. As a dietitian and the director of Nutrition Services at SPMHC, Miller wanted to see if she could encourage visitors and employees to eat healthier in the hospital café.
First, Miller moved the fruit to the salad bar. With this move, fruit was now charged by weight instead of individual prices. Then, she lowered the price of the entire salad bar, hoping customers would see the value in this fresh and healthy food choice.
Miller didn’t stop there. She also raised the price of candy bars. Sandwiches and all other items in SPMHC’s café remained the same price.
“We’ve been really happy with the changes, and we think our customers are too,” said Miller. “A lot more people choose the salad bar. We actually have to refresh the salad bar more often and order more salad bar ingredients than we used to.”...>>more
